    Sauerkraut Salad

    Ingredients

    • 1 quart sauerkraut, drained
    • 1 chopped sweet onion
    • 1 red bell pepper
    • 1 small head broccoli, chopped
    • 1 stalk celery, chopped
    • 1 large carrot, chopped
    • 5 or 6 cherry tomatoes, halved
    • 1/2 to 3/4 cup maple syrup, to taste
    • 1/4 cup raw apple cider vinegar
    • 1/2 cup EVOO

    Directions

    1. Mix sauerkraut, onion, celery, pepper, carrot, and broccoli in a large bowl.
    2. Mix syrup, oil, and vinegar together
    3. Pour mixture over salad.  Leave in the refrigerator for 2 days to meld flavors together.  I promise it’s worth the wait!!
